Czech-Texas Barbecue

A Waco institution for decades, Vitek's has a history stretching back to 1915, when William Martin Vitek, a Texas butcher and son of Czechoslovakian immigrants, opened a meat market and grocery store in Granger, Texas. He soon moved the shop to Waco, where it instantly became a community staple. Over time, Vitek's transformed from a grocery store and meat market to the city's most beloved barbecue restaurant.

Vitek's is popular with Waco locals and nearby Baylor University students. Today there's no longer a grocery story, but you can still buy smoked meat and sausage from the on-site meat market. On nice days, order a beer and sit outside in the biergarten.

There were several meats and sides to choose from. We decided to order smoked turkey breast and pulled pork. For the sides, we ordered everything (except the side salad, which I'm sure would have been tasty too). We got macaroni and cheese, potato salad, pinto beans, and coleslaw. Each portion was served with a generous helping of pickles, sliced jalapeños, and onions, and came with two slices of white bread and a cup of the house barbecue sauce.

All of the meat was soft and tender, and the juicy pulled pork especially just melted in the mouth. All of the sides were good, but the mac and cheese was our favorite.

Menu
I've always believed that the simpler the menu, the better the food. When a place specializes in just a few things (in this case, smoked meat), they tend to do them exquisitely well. Big menus can be too overwhelming, and places with too many options are never as good. That's how you know that Vitek's is going to be amazing! The whole menu is just one single-sided page!

Tuesday - Thursday from 10:30am - 3:00pm
Friday and Saturday from 10:30am - 8:00pm
CLOSED on Sunday and Monday
