After a day of hiking and exploring in the famous Big Bend National Park in far western Texas on the USA-Mexican border, we stopped in at the Starlight Cantina in tiny Terlingua, Texas for brisket and queso nachos and a delicious prickly pear cactus margarita.

This delicious appetizer starts with a sturdy base of thick-cut tortilla chips served alongside a bowl of succulent, smoky beef brisket that practically melts in your mouth.
