The Gut Pak

The famous Gut Pak is a Waco, Texas tradition. This dish, a Frito pie of sorts served with a massive helping of barbecue, baked beans, barbecue sauce, pickles, and more, makes up the most iconic dish in this central Texas college town.

The third-generation owners of Vitek's Market, an iconic Waco institution since 1915, introduced the now-famous Gut Pak in the 1980s. An instant hit with college students at nearby Baylor University (Sic'em Bears!), the Gut Pak is a HUGE portion of either brisket barbecue (the original Gut Pak) or pulled pork (the Pork Pak). There's also an option to order the Gut Pak served inside a baked potato called the Spud Pak. The base of your choice is served over Frito corn chips and topped with baked beans and barbecue sauce.
A Gut Pak is a super filling dish, but don't worry if you can't finish the whole thing. You can also order a half-sized Gut Pak.
The Gut Pak is more than just a meal, however. It also plays a big part in one of Baylor University's most cherished traditions: the Gut Pak Run. Each year the Freshman Class Council puts on the Gut Pak Run, a one-mile race to the "Gut Pak Shack", where students have to eat a Gut Pak and then run (or maybe roll) another mile back to campus.
