Looking for a quick late-night street food snack in Vietnam? One of my favorites is bánh tráng trộn, or Vietnamese rice paper salad.

This classic street food dish, described by chef and writer Andrew Zimmerman as "Vietnam in a bag", developed as a cheap after school snack. It is commonly found throughout the country but may have originated in southern Vietnam in or around Saigon (today Ho Chi Minh City).
This mixed salad uses shredded sheets of rice paper soaked in sauce as a base and is mixed with a number of local ingredients and flavors, typically including cilantro, slices of young green mango, dried shrimp, toasted peanuts, fried shallots, chili oil, scallion oil and tamarind sauce. A serving typically comes with two or three tiny, hard-boiled quail eggs. It's a savory, sweet, and sometimes slightly sour dish (due to the mango and tamarind sauce) and is a cheap and filling snack.
