Khao Kha Moo, or Braised Pork Leg

Khao kha moo, or braised pork leg on rice is a very popular Thai-Chinese street food dish found at many markets, food courts, and restaurants across Thailand.

To make khao kha moo, first the pork legs are seared in an oiled wok to brown the skin, then placed into a broth seasoned with star anise, cinnamon, Szechuan peppercorn, white pepper, mushrooms, cilantro root, garlic, and galangal. The stew is then simmered for hours until the pork is completely soft and ready to fall off the bone.
Boiled eggs are added to the five-spice stew, imbuing them with the rich flavors and aromas of the broth. The eggs are then sliced in half and served alongside the pork.
The dish is typically served with a side of pickled mustard greens, a few cloves of raw garlic (which is optional), and a drizzle of a bright-red spicy chili sauce to add an extra kick.
Though this dish evolved from a Teochew Chinese culinary tradition, it is now a uniquely Thai-Chinese dish, and one of Bangkok's most popular market-style lunch meals.
