Bai Lieng Pad Kai, or Stir-fried Melinjo Leaves with Egg

Melinjo is a small tree native to the Malay Peninsula. It produces a strong-smelling, slightly bitter edible leaf popular in Malay, Philipine, and southern Thai cuisine.
On a trip to Hat Yai in Thailand's far south, we ordered a dish of stir-fried melinjo cooked with scrambled eggs and seafood. It's a very healthy and well-balanced side dish to a great seafood meal.

The dish was stir-fried with scrambled eggs, fish, and shrimp. While the sauteed leaves themselves had a very strong "green" flavor, it was balanced by the sweet shrimp and hearty fish, and the strong flavor was cut by the mild taste of eggs.
