Bun Cha Gio, or Vietnamese Pork Noodles and Spring Rolls
at Bun Thit Nuong Kieu Bao, Ho Chi Minh City, Vietnam
Bun cha gio, sometimes called "Vietnamese noodle salad" is an interesting dish from southern Vietnam that combines vermicelli noodles with pork and a deep-fried spring roll all in one dish.
Bun Thit Nuong Kieu Bao was one of the most highly recommended local restaurants in Ho Chi Minh City, and we were very excited to try it on a recent visit.

The menu is small, just a few items. It's easy enough to figure out what to order. We ordered the famous bun cha gio. I always thought that spring rolls were more of a side dish, so it was really interesting to find that here, it was an ingredient in the bowl of noodles itself.
The noodles were rice vermicelli, and were topped with grilled pork, sauteed carrot, green onion, and stir-fried peanuts. The base noodle dish reminded me a lot of a similar dish, bun thit nuong, which is also very popular in the southern parts of the country.
The spring roll, which is filled with pork and vegetables and deep-fried until crispy and golden brown, is what makes this dish unique. You can eat it alongside the noodles, dipping both the spring roll or the noodles and pork into the provided dipping sauce. Like many other Vietnamese dishes, it's served with a huge bowl of vegetables and herbs, which you can add to your bowl to taste.
