Carbonara Udon - Japanese Fusion Noodles
by Tsuru Udon Ari (Bangkok, Thailand)
I've always loved the idea of fusion food. Harmoniously combining the best flavors from the cuisine of different cultures to create something totally new and unique is a really beautiful thing, especially when the combination sounds a little surprising.
The other day, I ordered a bacon carbonara udon noodle, a rich and super filling Italian-Japanese fusion dish from Tsuru Udon Ari, a modern Japanese noodle shop in Bangkok, Thailand's popular Ari neighborhood.

Udon are a type of thick, chewy, Japanese wheat noodle typically served in a warm broth. Here, they were served in the style of a traditional Italian carbonara. The sauce itself was creamy and made traditionally with egg yolk (no cream!). It was topped with a delicious grating of fresh parmesan, cracked black pepper, severla very thick cuts of salty cured bacon, and a rich orange egg yolk.
The udon was so filling that I could barely finish the bowl (although I did!).
While there are plenty of delicious and more traditional Japanese noodle dishes at Tsuru Udon Ari, this was my favorite. It was such a unique combination, and unlike anything I had eaten before.
