Deep-Fried Softshell Crab with Garlic and Pepper

I'm always excited when I find softshell crab on a menu. I can't get enough of it, and I always try to order it whenever possible. This dish, which I ordered at a beachside restaurant in Hat Yai, Thailand, was fried with garlic and black pepper and served with a chili dipping sauce. |

Softshell crab is always a delight. It's one of my all-time favorite foods, and I'm always especially happy when I can find this deligious Thai seafood dish on my travels along Thailand's coast.
Some people think that softshell crab is a specific species of crab. This is actually not the case! Softshell crabs are actually ones that have outgrown their shell and shed it before growing a new one. They are harvested at this stage when their paper-thin new exoskeleton is still soft enough to eat. The crabs are eaten whole and are much easier to eat without having to deal with the difficult shell!
I ordered a plate of deep-fried softshell crab that had been fried with garlic and black pepper. A lot of great Thai seafood dishes can be cooked with this simple, classic, yet delicious flavor combination.

The garlic is fried too, which gives an incredible crunch to the soft crab. Each piece is then dipped into a bright-red chili sauce (it's just a little spicy).
