Yum Kun Chiang, or Thai Spicy Salad with Sweet Chinese Sausage

"Yum" is a type of spicy Thai mixed salad. It's made up of sliced vegetables and some sort of protein (often pork, beef, or a fried egg) and mixed together in a spicy dressing made from vinegar, palm sugar, lime juice, and hot chili.
While traveling in Hat Yai, the largest city in Southern Thailand, I ordered a plate of yum kun chiang, or Thai spicy salad with sweet Chinese sausage.

While spicy and a little sour, this dish is actually also very refreshing due to the cucumbers that make up its base.
What made it extra special for me, though, was the inclusion of fried kun chiang, or Chinese sweet pork sausage. I tend to enjoy any dish that is served with Chinese sweet sausage. It was especially good in the yum salad, as it added a richness and a sweetness to the otherwise very spicy and sour salad.
