Boyoz, or Tahini Pastries

by İzmir İnci Boyoz, Istanbul, Turkey

Boyoz is a Turkish pastry with a long and complicated history.

Although today found only in Turkey, boyoz actually has Judeo-Spanish roots. The dish came to the more open and accepting Ottoman Empire in 1492 after the expulsion of the Sephardic Jews from Spain. Now, it's considered to be a purely Turkish delicacy.
