Coffee and Cronuts for Breakfast
at Nightlight Donuts and Coffee, Waco, Texas
Nightlight Coffee and Donuts is a trendy new donut shop and local favorite in Waco, Texas. After falling in love with New York-style croissant donuts, twin brothers Eric and Jackson Wren hired a French chef to help them develop a recipe and moved back to their hometown of Waco to open up their own donut shop.
Croissant donuts, or "cronuts", are a hybrid pastry that blends the best parts of croissants and donuts together. Cronuts have a unique flakey, layered croissant texture, but are glazed and baked like a donut.
This past week, I was visiting family in Waco, and my sister and I went to Nightlight to try their popular cronuts and classic "Nightlight Blend" drip coffee.

I don't get donuts very often at all, and when I do, they are almost always "Chinese donuts" (called youtiao or patonggo in Mandarin and Thai respectively). These sticks of fried dough are tasty, and I do enjoy them, but there's something about a real American-style donut that I just can't resist.
We ordered a small (half-dozen) box of donuts and ordered a variety of flavors to share and to bring back home for later. We wanted to try three of Nightlight's classics: glazed, chocolate, and cinnamon sugar.
Each of the classic donuts were delicious, but I wanted to try something a little more exotic as well, so I also ordered their signature beignet donut and two of their fall seasonal flavors: pumpkin pecan and chai.

The chai donut is one of Nightlight's seasonal flavors. The classic cronut is covered in a chai-spiced icing that incorporates all the sugar and spice flavors of autumn.

I also ordered another seasonal recipe: the pumpkin pecan donut. This is perfect for autumn, and includes flavors of two of my favorite Thanksgiving pies in one delicious pastry. The icing is pumpkin-spiced, and the cronut is topped with crumbled bits of Texas pecan.

Finally, possibly my favorite: the beignet cronut.
A beignet is a square-shaped fritter made with leavened dough and dusted with a mountain of powdered sugar. Originating in Franch, beignets became a staple of North American Acadian cuisine, and evolved into the Louisiana Cajun staple that is most famous in the United States today.
Nightlight takes the flavors of the classic New Orleans beignet, bakes it into a cronut, and covers it in a snowy layer of powdered sugar. It's beyond decadent, and if you want to try only one item from Nightlight, this is what I recommend!
