Alaska Arnold
by Toasted Yolk, Waco, Texas
Smoky salmon, hollandaise sauce, sauteed spinach, and fresh, hot coffee... it's the perfect brunch!
The "Alaska Arnold" is a classic eggs benedict that incorporates smoked salmon and wilted spinach rather than the traditional ham. Still topped with the classic poached egg and a large serving of hollandaise sauce, the Alaska Arnold is a fantastic take on one of my favorite brunch specials.

The Toasted Yolk is a Texas brunch restaurant with a few locations throughout the Lone Star State.
All of their food is amazing, and it's really hard to pick a favorite... but their selection of "Arnolds" (read: eggs benedict, weirdly named after America's first traitor), is a must-try.
The plate was served with a cup of fresh fruit, a serving of cheesy hash brown casserole, and a piping hot cup of delicious cafe-style drip coffee.
The Alaska Arnold, named for the generous slab of salmon topping a bed of spinach on English muffin, is a fantastic breakfast dish. It is smoky, savory, and just a little bit sweet, and is a filling and delicious way to start the day.
