Birria Tacos

I ordered the birria tacos at Wako Taco, a local favorite of mine.
Messy, dripping with juice, rich, filling, and totally delicious, these birria tacos can't exactly be described as "healthy", but they sure are worth making a stop to try when passing through Waco, Texas.

Birria is a popular dish that originated in Mexico and has spread into Tex-Mex cuisine. Traditionally made with mutton or goat, Tijuana-style birria uses beef cooked in more liquid. The result is a hearty, spicy, oily, and flavorful stew made from super slow-cooked meat (in this case, beef), aromatics, and spices.
Birria meat is shredded and piled into thick fried corn tortillas along with onions and lots of gooey melted cheese. The tacos are served alongside a cup of the bright red consommé that the meat was braised in. Dip the tacos in the sauce for an explosion of extra flavor. Be careful! This can get messy!
The tacos were served with a fresh lime, which added a bright zesty freshness to the top of the tacos.

Wako Taco is located at 1800 Summer Ave, Waco, TX 76708. It's located fairly close to downtown and a short drive from I-35.
