Cowboy Tacos and Candied Bacon

I met up with my brother and sister for a "sibling brunch". We were all in town to visit our parents in Waco, Texas, and we went out for breakfast at Toasted Yolk.
My sister ordered the cowboy tacos, but they looked so good that I stole a bite for myself so that I could write this post!

These classic breakfast tacos were served on thick flour tortillas. The tacos were stuffed full of scrambled eggs, grilled onions and bell peppers, bacon, scrambled sausage, and cheese. They were served with a side of hash brown casserole and fruit.
I ordered a side of candied bacon to share at the table. The bacon was crispy and crunchy and coated in a sweet and spicy glaze. It was really addictive, and I could have eaten an entire serving on my own.
