Sourdough Toast and Onsen Eggs
by Eggistan, Bangkok, Thailand
I was exploring Bangkok's Ari neighborhood, in my opinion one of the best places in the city to find amazing food.
It was an early morning, and I was on the lookout for some breakfast. My wandering brought me past The Commonroom, a small community mall down one of Ari's sois (small side streets).
I stepped inside Eggistan, a local brunch restaurant famous in Bangkok for their sourdough bread. I ordered an espresso sunrise and an onsen egg breakfast set, and sat down in the small, modern cafe to wait for my breakfast to arrive.

My breakfast arrived quickly. The coffee was excellent; a wonderful blend of strong, black coffee and sweet, tangy, pulpy orange juice.
The meal itself was simple yet hearty, allowing the flavors and ingredients to shine.
My breakfast combo set came with a bowl of two onsen eggs and two pieces of sourdough toast (or, rather one very large piece of toast cut into two portions).
An onsen egg is a type of soft-boiled poached egg originating from Japan. Traditionally slow cooked in the hot waters of an onsen (Japanese hot spring), the egg yolks have a unique custardy texture and super runny white. Typically served in a cup or bowl and garnished with black pepper and a splash of dark soy sauce or Maggi, onsen eggs are actually one of my favorite ways of eating eggs.
Eggistan is best known for their sourdough bread, which they make in-house each day.

The bread has a fantastic crispy texture and slightly sour flavor, and is served without any jam or butter, letting the flavors of the bread speak for themselves.

You can dip the bread into the creamy egg for a fantastic breakfast combo, or you can eat the bread separately and enjoy the rest of your onsen egg via spoon. There's genuinely no wrong way to enjoy this delicious combo set, and I highly recommend it no matter how you want to eat it.
