I met up with my brother and sister for brunch the other day. We were visiting our parents in Waco, Texas, and wanted to try out one The Toasted Yolk, one of the newer brunch spots in town.
Everything on the menu looked delicious, but I wanted to try something a little off beat. Always a fan of fusion dishes, I sought out the most southern thing on the menu: the Southern Fried Arnold.
The "Arnold", curiously named after one of America's most famous traitors, is Toasted Yolk's take on the classic eggs benedict. There are several options, but I wanted to choose something uniquely southern, so I ordered the "southern fried Arnold".
This dish is made by topping two halved southern-style buttermilk biscuits with fried chicken tenders, and thick sausage gravy. The perfectly poached eggs are the only "traditional" aspect of this dish, but by embracing a distinctly southern take on this classic, all of the flavors come together nicely. The runny yolks and gravy soaked into the biscuits, which absorbed all of the great breakfasty flavors.
The breakfast plate was served with a bowl of fresh fruit and a helping of hash brown casserole. With an additional cup of strong, black, diner-style coffee, it was a super huge breakfast that kept me full all day.
