Bami Moo Daeng, or Red Pork Egg Noodles

I had just arrived in Mukdahan, a small Thai city in the Issan region that shares a border with Savannakhet, Laos. After a long day on a ten-hour bus ride, I was tired and hungry. I crossed the street from the bus station and sat down at the first restaurant that I came to order a bowl of egg noodles with red pork for dinner.

The food here isn't necessarily Issan food, but is more similar to central Thai food. In fact, the full name of the restaurant actually references Ayutthaya, the ancient capital of Thailand, which is about an hour north of Bangkok by road.

I ordered a bowl of "bami moo daeng", or red pork egg noodles. My bowl of noodle soup arrived quickly. The owner asked if I wanted extra vegetables, and when I said "yes", he brought me a big basket full of lettuce, basil, mint, and other herbs to add to my soup for extra flavor and texture.

The noodles were thick and chewy egg noodles, and were served in a rich, savory broth with slices of sweet barbecued red pork (moo daeng), a pile of minced pork for more flavor and body, lots of chopped green onion, a heaping handful of bean sprouts, crispy fried garlic, and other aromatics.

Unlike some moo daeng, the pork was lean and not too fatty. It had a fantastic flavor, which went so well with the soup's pork bone broth and aromatics.

I paid only 60 Thai baht (or about $2 USD) for this huge bowl of noodles plus all of the veggies (which I added to my soup). The vegetables and herbs added a lot to the broth! It's not so common to get a bowl of greens like this in Thailand (unlike in nearby Vietnam), and I see this as a huge plus for this restaurant.

The noodle shop is located just across the street from the bus station, so it's a convenient place to eat if you are just arriving in town.
