I ordered a plate of pad kee mao moo, or drunken noodles with grilled pork, in Savannakhet, Laos.

Despite the name, this dish is not made with any sort of alcohol. It's a richly flavored and very spicy stir fry that uses a lot of hot red chilis along with other strong flavors including shallot, garlic, basil, fish sauce, soy sauce, and oyster sauce.

These noodles, full of chopped kale, sliced cabbage, and chunks of spicy red chili peppers, are hot, savory, and delicious. I ordered mine with slices of delicious marinaded pork.
