Hot Butter Cuttlefish

Hot butter cuttlefish is one of Sri Lanka's most famous seafood dishes.
The dish is made from bite-sized pieces of cuttlefish that have been marinated, lightly battered, and deep-fried to golden perfection, then sautéed with a concoction of spices, curry leaves, and, most importantly, copious amounts of sweet and sour caramelized garlic butter. This process results in a dish that's crispy on the outside, tender on the inside, and perfect for enjoying on the beach.

The cuttlefish is then tossed with fresh green onion, sauteed white onion, and thin slivers of carrot for extra color, flavor, and texture.
The dish is often served with fried rice and is super rich and very filling. If you're visiting Sri Lanka, it's definitely one of the definitive must-try meals, especially while near the coast.
Hot butter cuttlefish is rich, buttery, and salty. It's a lot for one person, but makes a great dish to share.
