Cheese Kottu Roti with Egg

Kottu roti, or kottu, is one of the must-try dishes when you are travelling in Sri Lanka. Sri Lanka's version of fried rice, kottu is a stir-fried dish made of chopped pieces of roti (Indian flatbread) stir-fried with meat, vegetables, and other ingredients to make a rich and filling dish.

The chopped roti bread was stir-fried with cabbage, carrot, red pepper, kale, and other ingredients. The dish was mixed with a rich and fatty melted cheese which coated every bite.
It was topped with a fried egg with a perfectly runny yolk and a sprinkle of black pepper.
Out of all of the dishes that I had in Sri Lanka - all of which were incredible - this may well have been my favorite!

Location
Chill Restaurant is located at a small guesthouse halfway between Negombo and Kurunegala in Sri Lanka. It's a great place to stop while on a road trip and driving across the country.
