String Hoppers with Green Curry

String hoppers are one of Sri Lanka's most iconic dishes. String hoppers are made from rice flour dough that is pressed through a mold to form thin noodles that are woven into discs and steamed.
The noodle cakes are served with various curries and can be eaten at all times throughout the day.
In Kandy, the ancient royal capital of Sri Lanka, I stopped in at Balaji Dosai to order their famous string hoppers with green curry.

The Sri Lankan green curry especially is rich and flavorful and goes very well with the string hoppers. The curry is served in a pitcher, which is meant to be poured over the string hoppers before they are picked up and dipped in the various dahl and curry bowls served alongside the hoppers.

String hoppers are one of my favorite Sri Lankan dishes, and they are pretty much ubiquitous on menus throughout the country. A rice flour paste is pushes through a strainer to create thin noodles, which are pressed into a disc. The rice noodle dish is then drizzled in, or dipped into, various curries.
While the noodles themselves are relatively plain, the curry is quite flavorful and spicy.
