Sai Krok Issan, or Northeastern Thai Fermented Pork Sausage
at Or Tor Kor Market, Bangkok, Thailand (Bangkok Farmer's Market)
Sai kro Issan, or Northeastern Thai fermented pork sausage, is a very popular street food snack throughout the country. Originating in Thailand's northeastern region (Issan), this sausage is set apart by its distinctive sour and tangy profile, courtesy of the fermentation process that it undergoes.
The dish begins with sticky rice, which is combined with pork meat and garlic, shallots, and fiery chili peppers. The aromatic mixture is then aged to undergo a controlled fermentation process in order to develop complex flavors that are both bold and nuanced. The flavor is strong, but flavorful, savory, and delicious. Usually eaten with slices of young ginger, cucumber, lettuce, and fresh spicy chilies, sai krok Issan is a wild mix of amazing flavor.
Location
Or Tor Kor Market, also called the Marketing Organization for Farmers, is one of my favorite markets in Bangkok. This massive farmers market is well organized, clean and hygienic, and is one of the best places to find the freshest produce, ingredients, and meat in the city. You can even find lots of things here that are more regional and often harder to find in Bangkok.
Or Tor Kor Market is located at 101 Kamphaeng Phet Rd, Chatuchak, Bangkok 10900 at MRT Kamphaeng Phet Station, and is located just across the street from the legendary Chatuchak Weekend Market (JJ Market). If you're feeling adventurous, you can definitely visit both on the same day.
