Handmade Pan-Fried Pork Dumplings by David's Noodles, Phnom Penh, Cambodia

Jiān Jiǎo, or Chinese-Khmer Pan-Fried Pork Dumplings

by David's Noodles, Phnom Penh, Cambodia

Although David, the eponymous owner of David's David's Noodles in Phnom Penh, Cambodia is world-famous for his noodle soup dishes, he also serves up a variety of amazing Chinese-Cambodian food.

On a recent visit, I order a plate of David's delicious pan-fried pork dumplings with garlic soy sauce.

The dumplings arrived quickly, sizzling hot and right out of the pan.

The dough is made by hand, and each dumpling is lovingly stuffed with the filling of your choice (I chose the traditional pork filling, but you can also get shrimp or mushroom as well). The dough is thicker and has a nice, slightly chewier texture than mass-produced dumpling wrapping. The wontons are pan-fried to give the outside a wonderful crispy texture which contrasts to the soft, rich, and savory filling on the inside.

I dipped a few of the wontons in the garlic soy sauce, but to be honest they were so good that I mostly just ate them plain!
