Kuy Teav Phnom Penh, or Phnom Penh Noodles
by Café Chiet, Phnom Penh, Cambodia
Kuy teav Phnom Penh, or Phnom Penh noodles, is a dish that is considered Cambodia's version of the ever-popular Vietnamese phở. This delicious, filling, and flavorsome noodle dish is especially popular in the capital city, Phnom Penh, and is considered a staple of Cambodian cuisine.

This savory and filling bowl of soup is filled with thin rice noodles (a bit thicker than vermicelli) and stuffed with an array of hearty ingredients like squid, pork balls, shrimp, grilled pork, fish cake, chives, cilantro, fried garlic, and more. It's a powerhouse of flavor, and a salty and savory way to start your morning (noodles like this are a popular breakfast in Cambodia).

The noodle soup is served with a side of bean sprouts, a wedge of lime, a chopped hot red chili, and a cup of a spicy chili paste that can be added to taste to your noodles to give them an extra spicy and umami kick.

I also ordered a glass of iced Khmer coffee, which came served in a beautiful old-fashioned glass inspired by traditional Cambodian glassware.
Rich and dark Cambodian robusta coffee was mixed with sweetened condensed milk to give the drink the iconic taste of Southeast Asian iced coffee.
In my opinion, any meal will be made more complete with a glass of iced coffee.
