Ba Mi Keow Ped Yang, or Roasted Duck with Green Noodles
by Toh's Roasted Duck, Bangkok, Thailand
At Toh's Roasted Duck, an old-school family-owned restaurant in Bangkok, Thailand, roasted duck is served on a bed of special green noodles.
I visited Toh's Roasted Duck, a restaurant whose specialty is evident in its name. This old-school Chinese-Thai shophouse restaurant has been serving up portions of succulent and juicy roasted duck for decades atop beds of their signature green ba mi egg noodles,
This dish combines vibrant green Thai ba mi noodles with succulent roasted duck and fresh bok choy, all brought together by a secret family recipe for the sauce that enhances its flavors.
The duck meat itself is super tender, and the skin is perfectly soft as well. The delicious red gravy that the duck is braised in is equal parts sweet and savory and has the exquisitely complex notes of Chinese five-spice.
The requisite helping of steamed bok choy, or Chinese kale, gives the dish an extra complexity and a small amount of green bitterness which comes together to enhance the flavors of the dish as a whole.
