Khao Moo Satay, or Pork Satay on Rice
by Sha Jui (ซาจุ้ย), Bangkok, Thailand
Satay is a popular Southeast Asian dish that originated in Indonesia but has since spread throughout the region with each nearby country putting its own unique spin on it.
The original dish in Indonesia, a Muslim country, consisted of grilled beef cooked on skewers and served with a peanut sauce. In Thailand, pork satay is most common. Because Thai restaurants are so popular worldwide, it is a common misconception that satay originated in Thailand, and peanut sauces and flavorings are often marketed as "Thai". In fact, Thai cuisine uses very few peanuts, and satay sauce is in and of itself an imported fusion dish.

Satay is most often served on skewers, but I recently ordered a plate of khao moo satay, or grilled pork satay served over rice. I had never had this unique dish before, but the inclusion of sweet and spicy Thai chili paste, steamed kale, and sweet green chilies served over a scoop of jasmine rice added a special local twist and extra complexity to this popular meal.
Eating satay as a rice dish changed it a lot. Freshly grilled slivers of pork meat were topped with a ladleful of sweet and salty peanut sauce, and the whole thing was given a dollop of Thai chili paste. The chili paste, mildly spicy with a rich umami sweetness, melded really well with the peanut sauce, even though it was not a combination I had ever seen or tasted before.
Sometimes I find satay sauce to be too sweet, but the chili paste and rice toned it down a lot to create an amazingly well-balanced dish.
