Tom Yum Dry Noodles with Crispy Pork Belly

Many people think of tom yum as a type of soup, but you can also order dry tom yum noodles in Thailand as well.
The noodles have all of the flavors of tom yum (chili, fish sauce, sugar, lime, roasted peanuts) but without the herbal broth.
This type of dry noodle is an interesting change from traditional tom yum soup. It's a unique dish that allows for the ingredients in the noodles to take the spotlight over the usual strong herbal flavors of the broth.

A serving of egg noodles was topped with chopped green onion, minced pork, roasted peanuts, pickled cabbage, bean sprouts, chili, sugar, and a few other aromatics. It was served with a wedge of lime and a handful of crispy wonton crackers.
I ordered a bowl of dry tom yum noodles with crispy pork belly. This was probably the very best crispy pork that I've ever had... and that's really saying something! There was nothing fatty or chewy in any piece. The skin was completely crisped and blistered like a pork rind, and the meat portion was thick, soft, and juicy. It was pretty much the perfect piece of crispy pork.
To eat these noodles, just squeeze the lime on top and mix everything up so that all of the flavors are incorporated and combined. You don't want to get a full bite of sugar or chili, so be sure to stir well!

I also tried a bowl of tom yum dry noodles with pork patty, which was served with the same ingredients. the pork patty was super soft, flavorful, and very delicious.
Both bowls of dry noodles were served with the traditional side of broth. Sometimes side bowls of broth can be a little bland, but I honestly think this was some of the best that I've had. It was perfectly flavored without being too salty, and it added a really nice contrast to the noodles.
This is a really special dish, and I will absolutely come back to enjoy it again!
