Bak Kuh Teh, or "Meat Bone Tea"
by Chok Dee Dim Sum, Bangkok, Thailand
Bak kuh teh, which literally translates to "meat bone tea", is a Teochew Chinese soup dish made from pork ribs stewed in a rich, dark herbal broth. This hearty and healthy meal does not actually contain any tea but is named such due to the blend of medicinal Chinese herbs and spices that are used to make the broth.
Although the dish originated in the Malay Peninsula, it's popular in Thailand too, especially within the Chinese-Thai community.

The soup is strongly herbal, but savory and well-balanced. The dark pork bone broth is balanced out by the herbs and vegetables which are boiled into the soup.
My bowl of bak kuh teh came with a generous serving of pork ribs, enoki mushrooms, and lots, and lots of dark green veggies. It was super savory, super filling, and super healthy.
It may not be my absolute favorite dish, but I do really like it, and the medicinal broth taste of bak kuh teh is strong and healthy, and it's definitely a meal that I'll have when I'm feeling under the weather.
