Khanom Guai Chai Tod, or Fried Chive Cakes

Sometimes the simplest little shops sell the greatest street food.
There's a small and nondescript food cart on Banthat Thong Road at the corner Soi Chulalongkorn 6 in Bangkok, Thailand that sells some of the most incredible khanom guai chai tod khai, or fried chive cake with egg that I've ever had.
Khanom guai chai are a type of pan-fried cakes made from tapioca flour, garlic, and chives. They are popular in Thailand and are similar to Cambodia's num kochay. Traditional Thai chive cakes are chewy, savory, and super aromatic, and are usually served with a strong, dark vinegar-based sauce.
Here, the chive cakes are chopped up and deep-fried in an oil-filled wok along with eggs. The chive cakes and eggs are mixed together until crispy and are served with a mildly spicy chili sauce. The dish is served in a paper cup and eaten with a bamboo skewer. It's absolutely bursting with flavors, and at just 50 baht, is a really great deal on a road already known for its amazing food options.
