Rojak Penang, or Malaysian Fruit Salad
by Penang Road Nyonya Cendol
Rojak Penang is a type of rojak, or Southeast Asian mixed fruit salad that is popular in Penang and other parts of northern Malaysia. Although rojak has its roots in Javanese cuisine, the type of rojak found in Penang is uniquely Malaysian. The dish is made from sliced green apple, cucumber, rose apple, pineapple, and cubes of firm tofu among other ingredients.
The mixture is then tossed in a flavorful dressing made from tamarind paste, prawn paste, and palm sugar and covered in crushed roasted peanuts.
The dish is bursting with salty, savory, and sweet flavors. The tangy flavors of the tamarind blend really nicely together with the salty shrimp paste and the natural sweetness from both the fruit and the palm sugar, and the mixture of textures from the different ingredients add a nice complexity to the salad.
