Yum Wun Sen, or Spicy Thai Glass Noodle Salad in Bangkok, Thailand

Yum Wun Sen, or Glass Noodle Salad

at SBC Market, Bangkok, Thailand

Yum wun sen is a classic Thai "yum", or spicy mixed salad. Yum can come in many different types made up of many different ingredients, but yum wun sen is specifically made by mixing thin "glass noodles" with minced meat, spices, chilies, herbs, and a bright, fresh, mildly spicy dressing.

I ordered a bowl of yum wun sen for lunch at a local market in Bangkok, and watched as the vendor prepared it by mixing in portions of each ingredient into a plastic bowl.

First were the noodles, followed by minced pork, crunchy roasted peanuts, chopped purple onions, red and green Thai chilis, chives, and a few other herbs. The salad was topped with a scoop of a vinegar-based dressing, then everything was mixed up so that all of the flavors melded together.
