Chicken IN Waffles

I love chicken and waffles! The southern American breakfast classic is a perfect combination of sweet and savory, and I'm always excited when I find a place that serves it.
I'm in Salt Lake City, Utah, this week, and made the pilgrimage to the famous Penny Ann's Cafe for their legendary "Chicken IN Waffles", which takes this dish a step further by stuffing the waffle batter itself with juicy pieces of fried chicken, infusing each bite with an incredible blend of flavors.

The idea is really innovative, and I've never heard of anything like it. The cafe chops up big pieces of crispy battered and deep-fried chicken tenders and mixes the large chunks of chicken into a traditional Belgian-style waffle batter which is then cooked in a waffle iron until perfectly golden brown and crispy on the outside.
Every bite of the waffle had a bit of chicken inside it, which combined the flavors even better than traditional chicken and waffles.
The waffle is served with a topping of powdered sugar and a big scoop of soft, creamy butter. Maple and boysenberry syrup is served on the side for extra sweetness. Personally, I think that maple goes best with chicken and waffles.
I loved the idea of this breakfast, and the dish didn't disappoint at all! It's definitely something I'd like to eat again next time I'm in Salt Lake City.

Breakfast isn't complete without coffee, of course, and I ordered a mug of the cafe's bottomless coffee. The staff are constantly walking through the cafe topping up your mug for you with coffee, keeping it fresh and hot.

Penny Ann's Cafe is located at 1810 S Main St, Salt Lake City, UT 84115. It's just a short walk from Central Pointe Trax Station, or an easy drive from pretty much anywhere in the city.
