Vietnamese-Mexican Bánh Mì Nachos

After a day of hiking in one of Utah's most incredible national parks, my parents and I were hungry for a delicious dinner. Taking the recommendation from the front desk staff at our hotel, we decided to eat at 98 Center, a local Vietnamese fusion restaurant located in the heart of Moab.
98 Center serves a variety of delicious Vietnamese dishes like pho and banh mi, but locally they are most renowned for their iconic fusion-style banh mi nachos, which incorporate the flavors and ingredients of a Vietnamese banh mi sandwich with the delivery of a Tex-Mex nacho plate.
A giant bowl of thick-cut nacho-style tortilla chips are topped with your choice of meat (we had the incredible pulled pork, which I would highly recommend) topped with the traditional flavors of a Vietnamese banh mi sandwich. The bowl is stuffed full of shredded carrots, sliced daikon radish, chopped purple onions, a handful of cilantro, crème fraîche, queso fresco (Mexican-style white cheese), and a handful of black and white sesame seeds all capped with a serving of house-made white kimchi.
The dish, which was more than enough to fill the bellies of three hungry hikers, is a perfect example of fusion food, and a wonderful way to experience the rich and complex flavors of both Mexico and Vietnam.

Traveler's Tips
Moab is the hub for adventures in eastern Utah. Located close to two of the nation's most famous and iconic national parks, Arches and Capitol Reef, Moab is a town built around the outdoor adventure tourism industry.
You would be remiss if you visited Utah, or even the southwestern United States, without paying a visit to these two parks.
