Shrimp Tom Yum Eggs on Rice

Tom yum, the national dish of Thailand, can come in many forms. Often, it's served as a soup. Sometimes it's as a dry noodle or fried rice dish. It can even be made into a tasty eggs benedict, a burger, or even a topping for crispy wontons.

This versatile family of hot and sour dishes made with various Thai herbs and spices - typically chili, galangal, kaffir lime leaves, lemongrass, chili paste, and other ingredients - is mashed into a paste and added to dishes to impart a rich flavorful taste of Thailand.

I visited a local diner-style shop for breakfast the other day and ordered shrimp tom yum eggs on rice. The dish was sort of a fusion-style food, incorporating a Japanese-style omelette into a more typical Thai dish.

A large, overturned bowl of Thai white rice was shrouded with a soft, fluffy, and pillowy Japanese-style omelette.

Different from the crispy, oil-cooked "khai jiao" of Thailand (one of my favorite things to order at a local made-to-order shop), a Japanese omelette is softer, creamier, and more similar to its French cousin.

The omelette was then topped with a ladleful of tom yum soup, which contained crispy fried dried chilies, several juicy shrimp, and all of the extra delicious herbs typically served with tom yum. The broth soaked into both the rice and the eggs to give every bite a delicious sweet, sour, savory flavor.

This was some of the better tom yum that I've had, and I really enjoyed my meal. It was simple enough, but filling and satisfying, and I'll definitely be going back for more.

The set menu came with a bowl of umami-rich fish broth. The Japanese-style soup was made from dashi (dried fish stock), and included shredded seaweed, green onions, and a lump of kani, or Japanese imitation crab stick.
