Viet-Thai Fusion Cuisine
by Long Doux, Bangkok, Thailand
Although Thailand and Vietnam are geographically close, their cuisines are quite distinct, with minimal overlap. Thai cuisine shares many similarities with Laotian food, while Cambodian cuisine has notable connections to Vietnamese food. However, Thailand and Vietnam are each celebrated for their unique culinary traditions.
There are some places in Thailand, though, that serve a sort of Viet-Thai fusion. The northeastern city of Udon Thani in particular is known for its vibrant Vietnamese-Thai community and their delicious fusion cuisine. This week I visited a popular restaurant in Bangkok's busy Chatuchak neighborhood called Long Doux. The restaurant serves up some of the city's best traditional Vietnamese fare with a bit of a Thai twist.

The first dish I ordered was grilled pork with rice noodles. It was almost like a sort of deconstructed bun cha, my favorite Vietnamese dish. Itcame with a bed of traditional Vietnamese fresh herbs topped with a mountain of rice noodles, shredded carrots and radishes (much like the filling of a banh mi), and roasted peanuts, and covered in a very classic salty and savory dressing made from fish sauce, vinegar, and sugar. It came with a serving of delicious grilled pork which had been marinated in some of Vietnam's most traditional sauces and flavors.
Next, I tried a side dish made from grilled pork stuffed with herbs and wrapped in betel leaves served with a side of dry rice noodles and a sweet and spicy plum and fish sauce dressing. This reminded me a lot of the type of food that I enjoyed in Hue and across central Vietnam.

The final dish that I ordered was a crispy turmeric pancake. While I had originally expected it to be a version of banh khoai, such as you might find in Hue, it ended up being closer to a Cambodian banh chao.
The crispy, crepe-like pancake was generously filled with savory minced pork, stir-fried bean sprouts, and aromatic herbs. It came with a spicy, savory dipping sauce perfect for drizzling over the top. Each bite delivered an explosion of flavor, with the textures and tastes harmonizing beautifully to create a truly satisfying dish.
